Beef Rice Recipe (Gosht Pulao)

This gosht pulao recipe makes a very aromatic combination of lovely seasoned rice and beef. The saffron in this dish gives the rice together with the other ingredients a wonderful color and taste.

If you prepare gosht pulao it isn’t necessary to prepare any side dishes, because the gosht pulao is a meal on its own.

Beef Rice Recipe (Gosht Pulao)

Recipe Ingredients

  • 2 cups basmati rice (washed and soaked)
  • 1 pound beef (cut in cubes)
  • 1 onion (thinly sliced)
  • 1 cup plain yogurt
  • 2 cinnamon sticks
  • ½ teaspoon red chili powder
  • 2 bay leaves
  • 2 black cardamoms
  • 4 to 5 black pepper seeds
  • 1 teaspoon cumin seeds
  • 1 teaspoon dried coriander
  • 3 cloves
  • 1 teaspoon garlic paste
  • 1 inch ginger piece (grated)
  • Salt as needed

  • 2 tablespoons vegetable oil
  • 2 tablespoons vegetable oil
  • Water as needed

Recipe Instructions

  1. Heat oil in a pan and add onions, sauté for 4 to 5 minutes or until translucent then add garlic paste, cumin seeds, salt, 1 cinnamon stick, 1 Black cardamom, dried coriander, black pepper seeds, red chili powder, cloves and bay leaves, mix well and again cook for few more seconds.
  2. Add beef pieces to the onion and spice mixture and cook until the beef is half cooked.
  3. Then add lemon juice, grated ginger and yogurt, cover the pan and cook for about 10 to 15 minutes or until the beef is properly done.
  4. In the meanwhile heat water in a large pan and add cinnamon stick, black cardamom and salt, then add the soaked rice and cook until the rice is almost done, don’t overcook, the rice should be a little bit hard then the normal.
  5. When the rice is done, drain out the water in colander and put under running cold water. Set aside.
  6. Now uncover the pan and check the beef, if it’s done, take out in a dish.
  7. Now in the same pan make one layer of rice then of beef mixture and then 1 tablespoon of saffron syrup all over roughly (so that the color is roughly distributed when the rice is done). Repeat the same procedure until the rice and beef is arranged fully.
  8. Seal the lid with dough and put something heavy on the lid to support the slow cooking inside. Cook for about 15 minutes at very low heat.
  9. Take out in a serving dish and serve with chilled yogurt and enjoy.
